Preparation of the pastry
1. Mix flour and butter; add the sugar;
2. add eggs, almonds, vanilla and salt;
3. roll pastry and coat the bottom of a baking pan or of several
little moulds;
4. put in the middle some dried beans to prevent the pastry
from bulging; pout it in the oven and cook at medium temperature;
take it off the oven as soon as it starts browning; let it cool.
Preparation of garnishing the and final touches
1. Cook all the ingredients for the Lemon Mixture in a bain-marie;
keep on stirring to prevent it from gluing, and cook the mixture
till it becomes a thick cream – withdraw from the fire
as soon as you have reached the right consistency and avoid
to spoil the exquisite taste;
2. pour the mixture on the bottom of the pastry cake; put it
in the fridge for 2 hrs before serving.
